Britannia ventilates one of the largest kitchens in the world

Britannia’s Ultrastream UV filtration systems in kitchen canopies at an MoD establishment reduce fire risk and enable heat recovery to be used.

As part of the refitting of the multi-award-wining Defence Food Services School at Worthy Down near Winchester, Britannia Kitchen Ventilation has installed the kitchen-ventilation system. It includes Ultrastream UV filtration to provide secondary grease and odour removal and is one of the largest UV kitchen-ventilation projects in the world.

Britannia was contracted through catering facilities specialist Portable Kitchens, who advised that minimising fire risk was a key object.

The 2-storey facility was originally an MoD computer centre and has been redeveloped to provide 14 large commercial kitchens requiring a total of 84 ventilation canopies. They were installed in 15 weeks.

The UV filtration reduces fire risk and also reduces whole-life cost through lower maintenance. Incorporating UV filtration also allowed the use of a heat-recovery system by protecting the heat exchangers from grease contamination. The UV lamps in each canopy break down organic matter in the grease and odours by a combination of photolysis and ozonolysis.

During the design stage it became apparent that the existing roof structure would not support the weight of large ventilation canopies. This problem was solved using structural ground-support frames designed and installed by Britannia. All the canopies stand on their own legs.
