Ledaire Fabrication has developed a range of mirror-polished stainless-steel extract canopies for restaurants that have their kitchens on show to patrons. A recent installation has been carried out by Alpollo AC Ltd at the stylish Bertorelli restaurant in London’s Plantation Place. Ledaire’s latest commercial kitchen-ventilation systems meet the requirements of the British Standard 6173:2001 and the HVCA Kitchen Ventilation Systems Standard DW 172. They combine the extraction of grease-laden air, steam and fumes with the supply of air to provide a comfortable environment. More refrigerant bans possible, says government
