Managing grease in small commercial kitchens

The latest grease-management system from ACO Building Drainage is designed for small kitchens such as pubs, cafes, snack bars, cafeterias and tea rooms to dispose of fats, oils and grease that might cause blockages in pipes. A free-standing ACO Mobile unit is supplied with universal waste pipe connectors for 40 or 50 mm waste pipes and can serve a single sink or dishwasher. It can be used as a gravity separator using natural flotation to separate fats, oils or grease from the waste water or with a natural biological enzyme to break down fats and grease for disposal to drain. With a gravity separator, floating fats, oils and grease are skimmed off periodically into an airtight container for disposal. With an enzyme activator, a programmable pump injects the required dose each day.
